A fast, creamy pasta made with ricotta, garlic, parmesan, and lemon — ready in under 20 minutes and perfect for a cozy, satisfying dinner.

Ingredients

  • 8 oz pasta of choice
  • 1 cup whole milk ricotta cheese
  • ⅓ cup grated parmesan cheese
  • 1 tbsp olive oil or butter
  • 1 garlic clove, minced or grated
  • Zest of 1 lemon (or 1 tbsp lemon juice)
  • Salt and pepper to taste
  • ½ cup reserved pasta water
  • Optional: chili flakes, fresh herbs for garnish

Instructions

  1. Boil pasta in salted water until al dente. Reserve ½ cup pasta water and drain.
  2. In a bowl, mix ricotta, parmesan, olive oil, lemon zest, garlic, salt, and pepper.
  3. Return pasta to pot or skillet. Add ricotta mixture and ¼ cup pasta water.
  4. Toss over low heat until creamy and well coated. Add more water as needed.
  5. Taste, season, and garnish with herbs or chili flakes. Serve warm.

 

Notes

Add spinach, peas, or roasted veggies for a boost. Easily made gluten- or dairy-free with simple swaps.
