3 medium sweet potatoes, peeled and diced
2 cups fresh spinach, chopped
6 large eggs
1/4 cup milk or dairy-free milk
1 cup shredded cheese (cheddar or mozzarella)
1/2 cup onion, finely chopped
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Optional: dried thyme or parsley

Instructions

  1. Preheat oven to 375°F and grease a baking dish.
  2. Boil diced sweet potatoes until just tender, then drain.
  3. Sauté onion in olive oil until softened, then add spinach and cook until wilted. Drain excess moisture.
  4. In a bowl, whisk eggs with milk and seasonings.
  5. Add sweet potatoes, spinach mixture, and cheese; mix gently.
