Tender pasta mixed with sweet corn, colorful vegetables, and a creamy, zesty dressing inspired by Mexican street corn.

Ingredients

8 ounces rotini or penne pasta
2 cups corn kernels (fresh, frozen, or grilled)
1/2 cup red bell pepper, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1/2 cup mayonnaise
1/4 cup Greek yogurt
2 tablespoons lime juice
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup cotija cheese, crumbled
1 jalapeño, seeded and finely chopped (optional)

Instructions

  1. Cook pasta according to package directions; drain and rinse under cold water.
  2. Prepare corn: fresh, frozen, or roasted.
  3. Dice vegetables and chop cilantro.
  4. Whisk together mayonnaise, Greek yogurt, lime juice, chili powder, smoked paprika, garlic powder, salt, and pepper.
  5. Combine pasta, corn, and vegetables; pour dressing over and toss gently.
  6. Fold in cotija cheese; chill 30 minutes before serving.

Notes

Roast corn for smoky flavor. Substitute feta for cotija. Adjust spice with jalapeño or cayenne.
