A creamy Healthy Tuna Pasta Salad with Peas made with tender pasta, tuna, sweet peas, and a light yogurt dressing served cold.

Ingredients

12 ounces rotini or penne pasta
2 cans tuna in water, drained (about 10 ounces total)
1 cup frozen peas, thawed
1/2 cup celery, finely diced
1/3 cup red onion, finely chopped
1/2 cup mayonnaise
1/4 cup plain yogurt
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped
1 tablespoon olive oil

Instructions

  1. Cook pasta in salted boiling water until firm yet tender, then drain and rinse under cold water.
  2. In a bowl, mix mayonnaise, yogurt, lemon juice, mustard, salt, and black pepper until smooth.
  3. Add cooled pasta and toss to coat evenly.
  4. Add tuna, peas, celery, and onion.
  5. Fold ingredients gently to combine.
  6. Add parsley and drizzle olive oil, then mix lightly.
  7. Chill before serving and stir again prior to serving.

Notes

Store in a sealed container in a refrigerator. If the salad becomes dry after chilling, mix in a small amount of dressing or lemon juice before serving to restore consistency.
