Vegetarian Stuffed Shells – Spinach & Ricotta Skillet

These Easy Spinach and Ricotta Stuffed Shells are packed with creamy cheese, flavorful spinach, and herbs, all baked in marinara sauce for a delicious vegetarian dinner.

  • 2024 jumbo pasta shells
  • 1 (15 oz) container ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 (10 oz) package frozen chopped spinach, thawed and squeezed dry
  • 1 egg
  • ½ tsp garlic powder
  • ⅛ tsp ground nutmeg
  • Salt and pepper, to taste
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella (for topping)
  • Fresh parsley or basil (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook shells until just al dente. Rinse with cold water and set aside.
  3. Mix ricotta, 1 cup mozzarella, Parmesan, spinach, egg, garlic powder, nutmeg, salt, and pepper.
  4. Stuff shells with 1½ tbsp filling each.
  5. Spread 1½ cups marinara in a baking dish. Arrange stuffed shells. Top with remaining sauce and cheese.
  6. Cover with foil and bake 25 minutes. Uncover and bake 10–15 more minutes.
  7. Let cool slightly. Garnish with herbs and serve.

Notes

Make ahead and refrigerate or freeze before baking. Try with béchamel or a spicy red sauce for variety.
