This easy, cheesy taco casserole turns your favorite walking taco flavors into a hearty one-pan dinner. Layered with beef, beans, cheese, and crunchy chips—ready in just 30 minutes.

Ingredients

1 lb ground beef
1 packet taco seasoning
½ cup water
1 can (15 oz) refried beans or 1½ cups black beans
½ cup sour cream or 4 oz cream cheese (optional)
23 cups shredded cheddar or Mexican blend cheese
23 cups corn chips or Fritos
Optional toppings: lettuce, tomato, avocado, jalapeños, salsa, green onions

Instructions

  1. Preheat oven to 375°F. Grease a 9×13″ baking dish.
  2. Cook ground beef in a skillet over medium heat until browned. Drain fat.
  3. Stir in taco seasoning and water. Simmer 2–3 minutes.
  4. Add beans and sour cream or cream cheese if using. Mix well.
  5. In dish, layer chips, meat mixture, and cheese. Repeat once, ending with cheese.
  6. Bake uncovered for 15–20 minutes until bubbly.
  7. Let rest 5 minutes. Add fresh toppings and serve warm.

Notes

Use cold toppings after baking. Customize with different proteins or chips. Great for meal prep and leftovers.
