2 medium sweet potatoes, peeled and diced
1 pound chicken breast, cut into bite-sized pieces
1 cup smoky BBQ sauce
1 cup shredded cheddar cheese
1 small onion, chopped
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon chili powder
2 tablespoons water
2 green onions, sliced

Instructions

  1. Heat olive oil in a skillet and cook sweet potatoes until lightly browned and tender.
  2. Add onion and cook until soft.
  3. Stir in garlic and spices and cook briefly.
  4. Add chicken and cook until mostly done.
  5. Pour in BBQ sauce and water, then simmer until coated and thickened.
