2 cups cooked chicken breast or thighs, diced
2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon butter, plus more for toasting
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
4 medium flour tortillas
2 tablespoons cream cheese or sour cream (optional)
1 tablespoon chopped fresh parsley or green onions
1. Heat olive oil in a skillet over medium heat.
2. Add chicken, salt, pepper, and paprika. Cook 5 to 7 minutes.
3. Stir in garlic and cook 30 seconds until fragrant.
4. Spread cream cheese on tortillas if using.
