3 large cucumbers
1/2 cup red onion
2 tablespoons fresh parsley or basil
1/4 cup olive oil
3 tablespoons red wine vinegar
1 teaspoon sugar
1 clove garlic
1/2 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  1. Slice cucumbers thinly.
  2. Slice red onion and add to a bowl with cucumbers.
  3. Whisk olive oil, vinegar, sugar, garlic, oregano, salt, and pepper.
  4. Pour dressing over vegetables and toss gently.
  5. Add herbs and mix lightly.
