1 1/2 pounds chicken breasts or thighs
1 cup white rice
1 can black beans, drained
1 cup corn
1 can diced tomatoes with green chilies
2 cups chicken broth
1 packet taco seasoning
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon garlic powder

Instructions

  1. Place chicken in slow cooker and season.
  2. Add rice, beans, corn, and tomatoes.
  3. Pour broth over mixture and drizzle oil.
  4. Cover and cook on low 4–5 hours or high 2–3 hours.
  5. Shred chicken and mix well before serving.
