2 cups elbow macaroni
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1 teaspoon white wine vinegar
1 clove garlic, minced
1/2 cup diced celery
1/3 cup diced red onion
1/2 cup diced bell pepper
1/2 cup peas or corn
2 tablespoons chopped parsley
1 tablespoon chopped chives
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  1. Cook macaroni in salted boiling water until al dente.
  2. Drain and rinse under cold water, then let cool.
  3. Dice the vegetables into small pieces.
  4. In a bowl, whisk mayonnaise, mustard, lemon juice, vinegar, garlic, salt, and pepper.
  5. Add cooled macaroni and toss to coat.
  6. Add vegetables and mix gently.
  7. Fold in herbs.
  8. Taste and adjust seasoning.
  9. Refrigerate for at least 1 hour.
  10. Stir before serving and adjust texture if needed.
