Easy stuffed bell peppers filled with seasoned beef, rice, tomato sauce, and melted cheese baked until tender. A complete oven-baked meal in one dish.

4 large bell peppers
1 pound ground beef
1 cup cooked white rice
1 small onion, finely chopped
3 cloves garlic, minced
1 cup tomato sauce
1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon dried oregano
1/4 cup water

Instructions

  1. Prepare and hollow bell peppers.
  2. Cook onion and garlic in olive oil.
  3. Brown ground beef.
  4. Mix in rice, tomato sauce, and seasoning.
  5. Fill peppers with mixture.
  6. Place in baking dish with water.
  7. Bake covered until soft.
  8. Add cheese and bake until melted.
  9. Rest and serve warm.

Notes

Do not overbake peppers if firmer texture is preferred. Cheese mix can be adjusted for flavor balance. Filling can be made ahead.
