BBQ Side-Fritos Chili Cheese Salad is a crunchy, creamy barbecue side dish made with chili cheese Fritos, romaine lettuce, cheddar cheese, black beans, corn, tomatoes, and a tangy taco-seasoned dressing. It is perfect for cookouts, potlucks, tailgates, and casual family meals.

1 large head romaine lettuce, chopped
1 9.25-ounce bag chili cheese Fritos
1 1/2 cups shredded sharp cheddar cheese
1 15-ounce can black beans, drained and rinsed
1 15-ounce can sweet corn, drained
1 cup cherry tomatoes, halved
1/2 cup finely diced red onion
1 medium red bell pepper, diced
1/3 cup sliced pickled jalapeños, drained and chopped
1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon fresh lime juice
1 tablespoon taco seasoning
1 teaspoon hot sauce
1/4 teaspoon black pepper
2 tablespoons chopped fresh cilantro

Instructions

  1. Chop the romaine lettuce, rinse it, and dry it very well.
  2. Drain and rinse the black beans, then drain the corn.
  3. Halve the cherry tomatoes, dice the red onion and bell pepper, and chop the pickled jalapeños.
  4. In a medium bowl, whisk together mayonnaise, sour cream, lime juice, taco seasoning, hot sauce, and black pepper.
  5. In a large serving bowl, combine romaine, black beans, corn, tomatoes, red onion, bell pepper, jalapeños, cheddar cheese, and cilantro.
  6. Add the dressing and toss gently until everything is lightly coated.
  7. Just before serving, fold in most of the chili cheese Fritos.
  8. Sprinkle the remaining Fritos over the top and serve right away.

Notes

Add the Fritos just before serving so they stay crunchy.
For a milder salad, skip the jalapeños and hot sauce.
For a heartier dish, add grilled chicken, taco beef, or pulled pork.
Store the salad base and chips separately when making ahead.
