Grilled Ranch Garlic Parmesan Chicken Skewers feature tender marinated chicken coated in ranch seasoning, fresh garlic, and Parmesan, grilled until lightly charred and juicy.
2 pounds boneless skinless chicken breasts or thighs, cut into 1 to 1 1/2 inch cubes
3 tablespoons olive oil
1 packet (1 ounce) ranch seasoning mix
3 cloves garlic, minced
2 tablespoons fresh lemon juice
1 cup finely grated Parmesan cheese, divided
Wooden or metal skewers
Optional: chopped parsley for garnish
1. Soak wooden skewers in water for 30 minutes if using.
2. In a bowl, whisk olive oil, ranch seasoning, garlic, lemon juice, and 1/2 cup Parmesan.
3. Add chicken cubes and toss to coat. Marinate in refrigerator for at least 30 minutes.
4. Preheat grill to medium-high heat and lightly oil grates.
5. Thread chicken onto skewers, leaving slight space between pieces.
6. Grill for 10 to 12 minutes, turning every few minutes, until internal temperature reaches 165°F.
7. Sprinkle remaining Parmesan over skewers during final minute of grilling.
8. Rest for 5 minutes before serving. Garnish with parsley if desired.
Chicken thighs remain juicier on the grill.
Do not overcrowd skewers to allow proper charring.
Baking at 400°F for 18 to 22 minutes is an alternative method.
