Ingredients

Scale

lbs sirloin steak, cut into bite-sized cubes
lbs baby potatoes, diced
2½ tbsp olive oil, divided
3 tbsp butter
45 garlic cloves, minced
½ tsp paprika (optional)
1 tsp salt, divided
½ tsp black pepper, divided
2 tbsp chopped fresh parsley

Instructions

  1. Heat 1½ tbsp oil in a large skillet. Add potatoes, salt, pepper, and paprika. Cook 15–20 minutes until crispy and tender. Remove and set aside.
  2. Season steak with salt and pepper. Heat 1 tbsp oil in skillet. Sear steak in batches, 1–2 minutes per side. Remove and set aside.
  3. Reduce heat to medium. Add butter and garlic. Sauté 30–60 seconds.
  4. Return steak and potatoes to skillet. Toss in garlic butter until coated and heated through.
  5. Garnish with parsley. Serve hot.

Notes

Don’t overcrowd the pan. Use a cast iron skillet for best results. Optional: finish with Parmesan or a squeeze of lemon.
