Cowboy Caviar is a fresh and colorful bean and vegetable dish made with black beans, black-eyed peas, corn, peppers, and a tangy dressing. It is perfect as a dip, side dish, or topping for a variety of meals.

Ingredients

1 15-ounce can black beans, drained and rinsed
1 15-ounce can black-eyed peas, drained and rinsed
1 1/2 cups corn kernels
1 cup diced bell peppers
1/2 cup diced red onion
1 cup cherry tomatoes, halved
1 small jalapeño, diced
1/3 cup chopped cilantro
1 avocado, diced

Dressing:
1/4 cup olive oil
3 tablespoons red wine vinegar
2 tablespoons lime juice
1 teaspoon sugar
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 clove garlic, minced

Instructions

  1. Rinse and drain the black beans and black-eyed peas.
  2. Dice the bell peppers, onion, tomatoes, and jalapeño.
  3. Combine beans, corn, and vegetables in a large bowl.
  4. Whisk together olive oil, vinegar, lime juice, sugar, cumin, salt, pepper, and garlic.
  5. Pour the dressing over the mixture and toss gently.
  6. Add chopped cilantro and mix.
  7. Let sit for 20 to 30 minutes.
  8. Dice the avocado and fold it in before serving.
  9. Taste and adjust seasoning if needed.
  10. Serve with tortilla chips or as a side dish.

Notes

Drain ingredients well to avoid excess liquid.
Add avocado just before serving.
Adjust spice level to taste.
Store in the refrigerator for up to 3 days.
