8 ounces whole wheat or chickpea pasta
2 cups fresh or frozen corn kernels
1 red bell pepper, diced
1/4 cup finely chopped red onion
1 small jalapeño, finely diced
1/4 cup chopped fresh cilantro
1/2 cup crumbled cotija or feta cheese
For the dressing:
1/2 cup plain Greek yogurt
1 tablespoon olive oil
2 tablespoons fresh lime juice
1 teaspoon chili powder
1/2 teaspoon smoked paprika
Salt and freshly ground black pepper to taste
Optional 1 tablespoon mayonnaise
1. Cook pasta until al dente, drain, and cool.
2. Grill or sauté corn until lightly charred.
3. Combine pasta, corn, bell pepper, onion, jalapeño, and cilantro.
4. Whisk dressing ingredients until smooth.
5. Toss dressing with pasta mixture.
6. Fold in cheese and refrigerate 30 minutes.
