2 pounds potatoes, peeled and chopped
4 cloves garlic, minced
4 tablespoons butter
2 tablespoons olive oil
1/2 cup milk or cream
1 teaspoon dried parsley
1/2 teaspoon thyme
1/2 teaspoon rosemary
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup chicken broth

Instructions

  1. Boil potatoes until soft, then drain.
  2. Mash with butter and milk until creamy.
  3. Cook chicken in olive oil until golden and fully cooked.
  4. Melt butter, cook garlic, and add herbs.
  5. Add broth and return chicken to coat in sauce.
  6. Serve chicken with mashed potatoes and spoon sauce over top.

Notes
