Wide pasta tossed with Italian sausage, bell peppers, tomatoes, and red wine for a bold and comforting meal.

Ingredients

12 ounces pappardelle or egg noodles
1 pound Italian sausage
1 tablespoon olive oil
1 small onion sliced
1 red bell pepper sliced
1 yellow bell pepper sliced
3 cloves garlic minced
1/2 cup dry red wine
28 ounces crushed tomatoes
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
Salt and black pepper to taste
1/4 cup grated Parmesan cheese
2 tablespoons fresh basil chopped

Instructions

  1. Cook pasta in salted water until al dente; reserve 1/2 cup pasta water.
  2. Brown sausage in olive oil and drain excess grease.
  3. Add onion and bell peppers; cook until softened.
  4. Stir in garlic and cook briefly.
  5. Pour in red wine and simmer 2 to 3 minutes.
  6. Add crushed tomatoes and seasonings; simmer 10 to 15 minutes.
  7. Toss pasta with sauce, adding pasta water if needed.
  8. Garnish with Parmesan and fresh basil before serving.

Notes

Simmer sauce longer for thicker consistency and adjust spice level to preference.
