Creamy corn soup with chicken and lime in the crockpot.

Ingredients

2 cups corn kernels (fresh, frozen, or canned)
1 1/2 pounds boneless, skinless chicken breasts or thighs
3 cups chicken broth
1/2 cup chopped onion
3 cloves garlic, minced
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
4 ounces cream cheese, softened
1/2 cup sour cream
1/2 cup crumbled cotija cheese (or feta)
2 tablespoons lime juice
1/4 cup chopped cilantro

Instructions

  1. Add ingredients to crockpot.
  2. Cook and shred chicken.
  3. Stir in cream ingredients.

Soften cream cheese first.
