Lemon Parmesan Chicken Pasta Salad is a fresh and zesty dish made with tender chicken, pasta, vegetables, and a light lemon dressing. It is perfect for meal prep, picnics, and easy dinners.

3 cups cooked pasta
2 cups cooked chicken
1 cup cherry tomatoes
1 cup cucumber
1/2 cup spinach or arugula
1/3 cup red onion
1/2 cup Parmesan cheese
1/4 cup olive oil
3 tablespoons lemon juice
1 teaspoon lemon zest
1 teaspoon Dijon mustard
1 clove garlic
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  1. Cook pasta until al dente, then cool.
  2. Cook and dice chicken.
  3. Prepare vegetables.
  4. Combine pasta, chicken, and vegetables in a bowl.
  5. Whisk olive oil, lemon juice, zest, mustard, garlic, salt, and pepper.
  6. Pour dressing over salad and toss gently.
  7. Add Parmesan and mix lightly.
  8. Chill for at least 30 minutes.
  9. Stir before serving and adjust seasoning.
