A hearty chicken rice bowl topped with creamy street corn, fresh vegetables, and smoky seasoned chicken.

Ingredients

1 1/2 pounds chicken breast or thighs
2 tablespoons olive oil
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon garlic powder
3 cups cooked rice
2 cups corn
1 tablespoon butter
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon lime juice
1/2 cup cotija cheese
1/4 cup cilantro
1 avocado
1/2 cup tomatoes
1/4 cup red onion

Instructions

  1. Season and cook the chicken until fully cooked.
  2. Prepare the rice.
  3. Char the corn in butter.
  4. Mix the corn with mayonnaise, sour cream, lime, cheese, and cilantro.
  5. Slice the chicken.
  6. Layer rice, chicken, and street corn in bowls.
  7. Add avocado, tomatoes, onion, and lime before serving.

 

Notes

Greek yogurt can replace sour cream for a lighter topping. Store ingredients separately for meal prep.
