Ingredients

  • 2 cups elbow macaroni (whole wheat or regular)
  • 2½ cups low-sodium vegetable or chicken broth
  • 1 cup milk (dairy or non-dairy)
  • 2 cups broccoli florets (fresh or frozen)
  • 1½ cups shredded sharp cheddar cheese
  • 2 tbsp parmesan (optional)
  • 2 tbsp cream cheese or ¼ cup Greek yogurt (optional)
  • ½ tsp salt
  • ¼ tsp garlic powder
  • ¼ tsp mustard powder (optional)
  • Black pepper to taste

Instructions

  1. In a large pot, combine pasta, broth, milk, broccoli, salt, garlic powder, and mustard powder.
  2. Bring to a boil, then reduce to a simmer. Cook uncovered for 8–10 minutes, stirring occasionally.
  3. When pasta is tender and liquid mostly absorbed, remove from heat.
  4. Stir in cheddar cheese, parmesan, and cream cheese or yogurt until creamy.
  5. Season with pepper and serve warm.

Notes

  • Add cooked chicken or beans for extra protein.
  • Use gluten-free pasta if needed.
  • Store leftovers in fridge up to 4 days.
