2 cups elbow macaroni (whole wheat or regular)
2½ cups low-sodium vegetable or chicken broth
1 cup milk (dairy or non-dairy)
2 cups broccoli florets (fresh or frozen)
1½ cups shredded sharp cheddar cheese
2 tbsp parmesan (optional)
2 tbsp cream cheese or ¼ cup Greek yogurt (optional)
½ tsp salt
¼ tsp garlic powder
¼ tsp mustard powder (optional)
Black pepper to taste
Instructions
In a large pot, combine pasta, broth, milk, broccoli, salt, garlic powder, and mustard powder.
Bring to a boil, then reduce to a simmer. Cook uncovered for 8–10 minutes, stirring occasionally.
When pasta is tender and liquid mostly absorbed, remove from heat.
Stir in cheddar cheese, parmesan, and cream cheese or yogurt until creamy.
