Ingredients

Skirt steak, olive oil, garlic, lime juice, cumin, salt, pepper
Parsley, oregano, chili flakes, red wine vinegar
Lemon juice optional

Instructions

  1. Mix marinade and coat steak.
  2. Rest briefly.
  3. Prepare chimichurri sauce.
  4. Sear steak on high heat.
  5. Rest and slice thinly.
  6. Top with chimichurri.
  7. Serve with sides.

Notes

Slice against grain for tenderness. Do not overcook steak.
