Tender chicken pieces coated in a glossy sweet and sour sauce with pineapple and bell peppers, perfect for meal prep.

Ingredients

1 1/2 pounds boneless skinless chicken breast
2 tablespoons cornstarch
1 tablespoon oil
1 red bell pepper diced
1 green bell pepper diced
1 small onion diced
1 cup pineapple chunks
1/3 cup ketchup
2 tablespoons rice vinegar
2 tablespoons soy sauce
2 tablespoons honey
1 tablespoon cornstarch mixed with 2 tablespoons water
3 cups cooked white rice

Instructions

  1. Toss chicken pieces with cornstarch.
  2. Heat oil and cook chicken until golden and cooked through. Remove and set aside.
  3. Sauté onion and bell peppers until slightly tender.
  4. Add pineapple and cook briefly.
  5. Whisk ketchup, rice vinegar, soy sauce, and honey.
  6. Pour sauce into skillet and simmer.
  7. Stir in cornstarch slurry and cook until thickened.
  8. Return chicken to pan and coat with sauce.
  9. Divide rice into containers and top with chicken mixture.

Notes

Cool completely before sealing meal prep containers.
