1 1/2 pounds flank steak or sirloin
1/4 cup balsamic vinegar
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon black pepper
2 ears fresh corn
6 cups mixed salad greens
1 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
1/2 cup crumbled Gorgonzola cheese
Additional balsamic vinaigrette for serving
1. Whisk balsamic vinegar, olive oil, garlic, Dijon, salt, and pepper.
2. Marinate steak for at least 30 minutes.
3. Preheat grill to medium-high heat.
4. Grill steak 4 to 6 minutes per side until desired doneness.
5. Grill corn until lightly charred, then slice kernels off cob.
6. Rest steak 5 to 10 minutes, then slice against the grain.
7. Assemble greens, vegetables, corn, steak, and Gorgonzola.
8. Drizzle with vinaigrette and serve.
